Não cria tabelas usando o ("hibernate.hbm2ddl.auto", "update");

Boa noite pessoal.

O Hibernate não está criando a tabela de produtos no banco de dados, sem erros ao subir o servidor. Descobri que tem a ver com a configuração abaixo: props.setProperty("hibernate.hbm2ddl.auto", "update");

Em outro curso é utilizado a seguinte configuração: props.setProperty("hibernate.hbm2ddl.auto", "create-drop");

Troquei para ela e tudo funcionou corretamente, mas gostaria de entender o por que disso. Não consigo usar a configuração com update igual o professor sugeriu, alguém sabe qual deve ser o motivo? Eu estou utilizando o Mysql 8.0.17.

o update não vai criar a tabela, esse atualiza se ela já tiver sido criada
