Erro

Provavelmente vc está usando java 11: https://crunchify.com/java-11-and-javax-xml-bind-jaxbcontext/

Uma coisa que vc pode tentar fazer é atualizar o spring boot no maven, isso deve resolver a menos que vc tenha uma dependencia direta do javax.xml.bind, ai melhor seguir o artigo que eu linkei

Obrigado por responder! Segui o que você disse e não adiantou, agora mudei para o java 8 e atualizei o spring boot e o erro persiste
