Fala Luiz, tudo bem?

Provavelmente esse problema é por conta da versão mais nova do hibernate no spring boot 2, fazer o downgrade para a versão 1.3.6.RELEASE deve resolver

Eu alterei a versão como dito, agr começou a acusar outro erro

Eu coloquei como disse Guilherme, ele voltou a dar o Error creating bean with name 'entityManagerFactory', porem mudou o coused by.

Após esse novo erro eu tentei retirar o spring.jpa.properties.hibernate.dialect = org.hibernate.dialect.MySQL5Dialect do application.properties e funcionou, muito obrigado pela atenção e pela ajuda.
